
Tomato Basil Butter

Melted over grilled chicken, beef or lamb.
Or maybe add a touch of savoury goodness to green beans & grilled zucchini!
1 cup of butter softened
4 Tablespoons finely chopped sundried tomatoes
4 tablespoons chopped fresh basil
2 cloves of garlic minced
Beat butter in a small bowl until smooth & creamy.
Add the remaining ingredients, beat well.
Cover & chill for approximately 1 hour until butter is firm but not too hard.
Roll into logs and wrap in parchment paper(alternatively you can also store in jars/tubs). Place in the refrigerator.
Keeps fresh in the fridge for 5 days or 3 months in the freezer.
